INGREDIENTS FOR THE DOUGH:
- 250 g Basic universal bread, pizza, bakery flour mixture
- 5 g psyllium husk flour
- half a package of powdered yeast (3.5 g)
- 6 g salt
- 10 g sugar
- 200 g lukewarm water
- 10 g oil + for shaping
To decorate:
- ketchup
- flax seed
- chia seed
PREPARATION:
Mix the dry ingredients for the dough, then add the lukewarm water and oil. Mix with a food processor on medium speed for 5 minutes until it is homogeneous and completely smooth. Knead the dough on an oiled surface with oiled hands too. Leave to rise for 30 minutes in a lightly oiled bowl. On an oiled surface, use oiled hands to form 6 buns, then poke a hole in the center with your finger. Let the bagels rise for another 15 minutes at 50 degrees (in the oven). Boil water, add 2 tablespoon sugar in it, and cook each bagel one by one on both sides for 30 seconds in the bubbling water. After draining, carefully put them onto the tray and spread them thinly with ketchup, then sprinkle with the seeds. Bake in a preheated 220 degree oven for 25 minutes.
