INGREDIENTS:
For the cookies:- 125 g Bake-Free Sweet & Savoury Biscutis flour mixture
- 45 g erythritol
- 20 g coconut oil, melted
- 30 g cashews
- 90 g lukewarm water
- 1 teaspoon vanilla extract
For the filling:
- 80 g cashews
- 40 g water
- 15 g erythritol
Preparation:
For the filling, simply combine the ingredients in a food processor until smooth.
Mix together the ingredients and let it rest for 15 minutes. Roll out the dough on a dry surface to about 0.5 cm thickness, then cut into desired shapes. Bake in a preheated oven at 180°C on a silicone baking sheet for about 10 (no more!) minutes using both upper and lower heat. Once cooled, fill them with the prepared filling!
