Ingredients:
For the dough:
- 125 g Bake-Free Sweet and savory biscuit flour mixture + 15 g for flouring
- 15 g baking powder (3 g)
- 30 g coconut oil (in liquid form)
- 90 g lukewarm, sugar-free almond yoghurt or coconut yoghurt
- 5 g Himalayan salt
- 30 g grated vegetable cheese
On top:
- sesame seeds, black sesame seeds
- 20 g sugar-free almond yoghurt
- smoked paprika powder
Preparation:
Mix the dough ingredients and let it rest for 10 minutes. On a floured surface, roll out thinly and cut into 25 equal pieces. (The dough is very different from the usual, it is very loose, but it is nice to work with, it will come together when you roll it out.) Place on a baking tray lined with silicone baking paper. I used a floured knife to reach underneath them so they stayed together. Mix the yoghurt with the paprika and spread over the bars, then sprinkle with sesame seeds. Bake in a preheated oven at 180°C for 10 minutes (it doesn't need more!!), top and bottom baking.
