INGREDIENTS for 12 pieces:
For the dough:
- 250 g Mill & Folks Basic universal bread, pizza, bakery flour mixture
- 5 g Mill & Folks Psyllium husk flour
- half a package of powdered yeast (3.5 g)
- 6 g of Himalayan salt
- 10 g of sugar
- 200 g lukewarm water
- 10 g of oil
- 15 g of rice flour for shaping
On the top:
- ketchup
- oil
- Flaxseed
PREPARATION:
Mix the dry and wet ingredients in separate bowls, then pour them together and work with a food processor on medium speed for a maximum of 5 minutes. Leave it covered in a warm place for 45 minutes. On a surface lightly sprinkled with rice flour, roll it out into a thin round sheet (for me, it was 30 cm in diameter). Cut it into 12 equal pieces and roll them up from the wider ends. Put it on a baking sheet lined with silicone baking paper, spread it thinly with ketchup mixed with a little oil, sprinkle with flax seeds, and continue to rise in a 50-degree oven for 30 minutes. Bake in a preheated oven at 200 degrees for 30 minutes, bottom-up.
