Puffy chocolate and orange flavoured cookie

Puffy chocolate and orange flavoured cookie

Ingredients:

For the dough:
  • 125 g Bake-Free sweet & savoury biscuits flour mixture
  • 70 g erythritol
  • 6 g organic cocoa powder
  • 35 g free-from dark chocolate
  • quarter packet of baking powder (3 g)
  • 1 medium orange
  • sugar-free almond drink or water
  • 30 g coconut oil (in liquid state)
  • 1 tablespoon of chocolate or rum flavor
To roll in:
  • 20 g of coconut flour

Preparation:

Grate the orange and squeeze out the juice. Mix together the dry ingredients for the dough, also break the chocolate into small pieces. You will need 90 g of liquid. So if the orange juice is 78 g, pour enough almond drink into it to make the whole mixture 90 g, so 12 g of almond drink went into it. This 90 gram mixture can be replaced with water, plant drink, or pure orange juice, as you wish, the main thing is to have it per gram. Add the coconut oil and aroma to the dry ingredients, then knead. It will be a loose, soft, crumbly dough, that's how it should be. Let it rest for 10 minutes, then shape it into 12 identical balls with wet hands. Roll them in coconut flour and line them up on a baking sheet lined with silicone baking paper. Now we're going to cheat a little: carefully cut the top with a sharp knife to make it more like the original. It will crack on its own, but it will be nicer this way. Bake in a preheated oven at 180 degrees celsius for 15 minutes, conventional top and bottom setting.
